There is something about the combination of sweetness and the delicious taste of pecans that just makes this pie a welcome addition to the end of a meal. Muffins are a treat that is enjoyable, regardless of whether you are eating them in the morning or in the middle of the afternoon. Although there are many different types of muffins to enjoy, you can now add a pecan pie muffin to the mix. It is absolutely fantastic and when you taste the delicious flavors come through in this simple muffin recipe, you will make it again and again.
1 cup packed brown sugar
½ cup flour
2 cups pecans, chopped
⅔ cup butter, softened
2 eggs, beaten
12 whole pecans for decoration
Heat oven to 350 degrees. Grease muffin tin with cooking spray and set aside.
Mix sugar, flour and chopped pecans together, in separate bowl beat butter and eggs until creamy, stir in dry ingredients until just combined.
Spoon batter into muffin tin and bake for 15-18 minutes.
