Delicious Cilantro Lime Chicken Salad Including Mango Avocado Salsa

When it comes to lunch, many of us tend to grab whatever is in front of us and eat it on the go. It is one of those meals that tends to be less than desirable and in many cases, we might not even care much for what we are eating. It’s time to change the way you eat lunch and this cilantro lime chicken salad with Mango avocado salsa is the perfect way to do so.

Ingredients:

For the marinade/dressing

3 tbsp olive oil
1/2 cup lime juice
1/2 cup fresh chopped cilantro
4 cloves garlic, crushed
2 tsp honey
1 tsp brown sugar
1 tsp ground cumin
1 1/4 tsp salt

For the salad

4 chicken thigh fillets, skin removed (no bone)
5 cups romaine lettuce leaves, (washed and dried)
1 red pepper, sliced

For the mango salsa

1 large mango, diced
1 avocado, diced
1 green onion, peeled and thinly sliced
Extra cilantro leaves to garnish
Red chili flakes, to garnish

Instructions:

Whisk together all the ingredients for your marinade in a bowl.

Pour about 1/3 of the marinade onto the chicken and let sit for at least 15 minutes or up to two hours. Refrigerate the rest of the marinade to use as dressing for your salad.

In a bowl, mix together the mango and avocado with the green onions. Use two tablespoons of your dressing you already prepared and stir it in.

In a skillet, cook your chicken with one teaspoon of oil until it’s ready and then take it off the heat.

Use your skillet to grill your peppers with a bit of olive oil.

Now you are ready to prepare the salad! Start by slicing your chicken into strips, then add your sliced peppers and mango-avocado salsa to the lettuce. Top with your sliced chicken strips and then drizzle the remaining dressing on top. Sprinkle the extra cilantro and red chili flakes if you choose and then you are ready to serve!
