This Delicious Chicken Parmesan Dish Is Going To Change Your Concept Of Casserole

When many of us think about casserole, we think about throwing together all of the leftovers we have in the refrigerator to make a single dish. Although that may be one loose definition of the term, casserole does not need to be boring, nor does it have to involve many different types of food. When a casserole is designed properly, it can be the most delicious meal of your life.

That doesn’t mean, however, that it isn’t possible to use chicken. For example, this chicken Parmesan casserole is the best way to use your left over chicken and your family will love it. It doesn’t take long to whip up this dish and once you make it, you will find that it becomes a family favourite very quickly.

Ingredients:

4 cups fully cooked chicken, shredded or cubed
1 jar (28 ounces) marinara sauce
½ cup grated Parmesan cheese
1½ cups grated mozzarella cheese
1 cup panko bread crumbs
1-2 tablespoons olive oil
Fresh parsley and basil, chopped, to taste
Salt and pepper, to taste

Directions:

Preheat oven to 350 degrees.

Grease an 8×8 casserole dish with cooking spray.

Layer the chicken in the bottom. Dump in the marinara sauce and mix with the chicken.

Next, top with both cheeses until all the chicken is covered.

In a small bowl, mix the breadcrumbs, olive oil, fresh herbs and a dash of salt and pepper together.

Sprinkle the seasoned breadcrumbs over the top.

Bake for about 20-25 minutes or until golden on top and bubbling on the sides.
