For those of you who don’t know or were afraid to ask the Hasselback is basically a method of cooking that originated in Sweden. The technique enables you to end up with a lovely crunchy texture and is something totally different from your standard Apple Pie
Much to my waist line’s disgust desserts are my favourite part of each and every meal and as a consequence, I am always on the lookout for new and exciting dessert recipes. The one thing that does enable this dessert to gain some points is that baked apples are actually very good for you, so, at least, the news is not all bad. This does however, depend on the fact that you don’t smother the dessert in cream or ice-cream, or any other calorie laden topping.
For this recipe, you will need 2 large firm apples, peeled, cored, and halved vertically, cooking spray, 4 tablespoons brown sugar divided, 2½ tablespoons butter, melted and divided, ¾ teaspoon ground cinnamon divided, 2 tablespoons old-fashioned rolled oats, 1 teaspoon all-purpose flour, ¼ teaspoon kosher salt, and 1½ cups low-fat vanilla ice cream.
After preheating your oven to 400°, in a bowl pour in one portion of the sugar, cinnamon, melted butter and mix well. Prepare your apples by peeling, removing the core and cutting in half. Make slices along each and place them in a baking dish prepared with cooking spray. Brush the apples with the sugar mixture, cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes.
In another bowl, mix the other portion of sugar, butter, cinnamon, rolled oats, flour, salt and mix well. Open up the slices in the apples and pour on the mixture. Bake for another 10 minutes. The scent should be magical at this point.
Serve with a scoop of vanilla ice cream and you’ve got yourself a heaven sent dessert!
