There are many occasions that call for a brunch and in some households, it is a weekly occasion. Although you can make anything for this delicious meal, once you try this easy brunch bake recipe, you may never want anything else! It is absolutely delicious and your family will be scraping the sides of the pan before it is done.
Although many people consider brunch to be a late morning meal, it can actually be consumed as late as 3 PM in the afternoon. It seems to have gotten it’s start in England in the late 1800s but it didn’t become popular in the United States until the 1930s.
Here’s the recipe:
6 refrigerated buttermilk biscuits
12 eggs
1/2 onion, diced
5 oz Canadian bacon, diced
1/2 cup cheddar cheese
1/2 cup mozzarella cheese
1/2 tsp salt
1/4 tsp pepper
2 Tbsp. chives, chopped
Whisk together the eggs, onion, bacon, cheese, salt, and pepper. Place buttermilk biscuits in a greased 9×9 inch casserole dish, and pour the egg mixture over them. Top with chives. Bake at 350°F/177°C for 30-35 minutes. Let cool and top with more chives (optional).
