Fried Bologna Casserole Is As Yummy As You Can Imagine

From the time we were little children, we loved eating bologna. In fact, it was part of one of the most iconic television commercials of all time. Of course, back then, we lived on cold bologna sandwiches but this recipe is about to take that classic lunch and make it epic. In fact, you may never look at bologna the same way again.

The recipe is for a fried bologna casserole and it is going to blow your mind. Not only is it easy to make (what couldn’t be easy with bologna?) it is quite delicious as well. It takes the bologna that we have loved our entire lives and makes us love it all over again. Yeah bologna!

Ingredients:

8 slices bologna
3 tablespoons butter
1 onion, chopped
4 cups warm mashed potatoes
1 1/2 cups shredded Cheddar cheese

Directions:

Preheat oven to 350 degrees F (175 degrees C). Grease a 1 1/2 quart baking dish.

Heat a skillet over medium-high heat. Fry the bologna slices in the hot skillet until browned on both sides, about 1 minute per side. Drain on a paper towel-lined plate. Wipe excess grease from the skillet, reduce heat to medium, and stir in the butter and onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir the onions into the warm mashed potatoes.

Spread ⅓ of the mashed potatoes into the prepared baking dish. Layer with 2 of the fried bologna, and sprinkle with ⅓ of the cheese. Repeat with the remaining ingredients.

Bake uncovered in the preheated oven until the cheese is bubbly, and the center is hot, about 30 minutes.
