This Cranberries Salsa Puts A Delicious Twist On A Classic Treat

It seems to satisfy our need to have something delicious and because we eat it on chips, it satisfies our need to crunch as well. Cranberry salsa is perfect for those special occasions when our family gathers together for a meal. The fact of the matter is, however, you don’t need to wait for a large gathering to enjoy this delicacy. It is easy to make, so you could be enjoying a spoonful of it this afternoon as a way to hold you over between lunch and dinner.

Ingredients:

12 Ounce package frozen cranberries
1 cup granulated sugar
6 green onions (chopped)
1/2 cup fresh cilantro leaves (chopped)
1 jalepeno pepper (seeded and finely chopped)
1 Tablespoon fresh lime juice
8 Ounce package cream cheese (regular or dairy-free)
assorted crackers

Directions:

Place cranberries and sugar into the bowl of a food processor.

Pulse until coarsely chopped.

In a medium bowl, stir together cranberry mixture, green onions, jalapeno, cilantro, and lime juice.

Cover and refrigerate for several hours or overnight.

When ready to serve, place softened cream cheese on a serving plate. Using a slotted spoon, drain salsa and pour over the top of the cream cheese.Serve with assorted crackers.
