Revisit Your Childhood With This Rice Krispie Ice Cream Sandwich

Think back to the time when you were young and spent your summers playing outside. It seemed as if the days would just go on forever and, from time to time, they were punctuated with a treat. For many of us, that treat was an ice cream sandwich, a rather ordinary ice cream bar with chocolate cookies on either side. Those days are not far away once you try this recipe.

Although this isn’t your ordinary ice cream bar, it does combine some of the best treats that life has to offer. Not only does it have a thick layer of strawberry ice cream in the middle, it is sandwiched between two rice krispie treats. If that isn’t enough, the edges are dipped in sprinkles to add a little flavor and a lot of color. These ice cream bars are fantastic, and they are easy to make. Your summer may never be the same again.

Here’s what you’ll need to make them:

3 tablespoons butter
6 cups Rice Krispies cereal
4 cups mini marshmallows
1 teaspoon vanilla
1 tub of strawberry ice cream
Sprinkles or other flourish

And here’s how to make them:

Spray an 8″ or 9″ square cake pan with non-stick spray.

Remove the ice cream from the freezer to thaw slightly.

Melt the butter in a pan on low heat.

Add marshmallows and melt on low heat. Then, add in vanilla.

Gradually stir in the Rice Krispies. Turn off the heat.

Scoop half of the cereal mix into the cake pan and press into shape.

Spread a layer of ice cream on top of the cereal mix to desired thickness. Freeze for 5-10 minutes.

Scoop remainder of the Rice Krispie Treat mix on top of the ice cream. Press into shape.

Pop the entire thing in the freezer for several hours or overnight before cutting and serving.
