This S’mores Waffle Sandwich Should Be On Every Menu

There are many reasons to get excited about food but perhaps the one that more people get excited about than any other are S’mores. I don’t know if it is because of the nostalgia of eating them when we were camping as children or if it is just because they are yummy beyond belief, but they seem to be an iconic food for most people.

Of course, we have many different S’mores recipes, each of which tries to capture the essence of this snack in some way or another. Some of those recipes hit close to home but now that I’ve seen these S’mores waffle sandwiches, I think I’ve found my go-to choice. They are not only fantastic, they are beyond belief. Try some of these for yourself; your family will thank you over and over again.

Ingredients:

For the batter

2 eggs
2 cups all-purpose flour
1 3/4 cups milk
1/2 cup vegetable oil
1 tablespoon white sugar
4 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract

For the filling

1 bag of marshmallows
1 cup of graham cracker crumbs
1 cup milk chocolate chips

Directions:

To make the waffles, beat eggs in large bowl with hand beater until fluffy. Beat in flour, milk, vegetable oil, sugar, baking powder, salt and vanilla, just until smooth.

Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until just before golden brown. Stack them on waxed paper.

When ready to serve, heat the waffle iron and place half the waffle in the iron and the other half ready to fold over. Sprinkle marshmallows, ¼ graham cracker crumbs and ¼ cup milk chocolate chips across.

Press down the other half of the waffle and close the iron. Cook until chocolate starts to melt and marshmallow is oozing out.
