Banana Split cakes are just amazing. For me, they bring back memories of childhood, trips to the ice cream parlour, or desserts after a lovely meal. There is also something that links them to the summer for me, long hot lazy days in the sunshine.
This recipe is not as easy as making your standard Banana Split Cake would normally be, but there is one huge benefit and that is there is no baking required. A cake without having to bake I hear you say? Well, that’s exactly what we have here and not only does it look stunning but it tastes as good as any Banana Split cake I have ever had the pleasure to eat. The other good thing is that whilst it does contain some naughty ingredients, there is also a good amount of fruit in this delightful cake, so you can, at least, try to reassure yourself that it is not too bad for you. The recipe itself actually uses cream rather than ice-cream but for me, this is something I personally had to change. After all, you can’t have Banana Split cake without Ice- Cream.
