How To Make Coconut Oil Brownies (Dairy-Free)

If you had to choose a type of dessert that you would eat for the rest of your life, would brownies be near the top of the list? For many people, they are the entire list! After all, when brownies are done the proper way, there is nothing quite as delicious. It is the combination between the flavors, the crust around the edges and the chewy centers, however, which really makes this a favorite in many households.

One of the problems that many people experience when they make brownies is they tend to dry out too quickly. That can be a real problem, but it doesn’t have to be an issue that you deal with regularly. These coconut oil brownies are absolutely lovely and they make the perfect treat for after dinner, an afternoon snack or even raiding the refrigerator at midnight.

These brownies use coconut oil, so there is no dairy included. Many people who are lactose intolerant or who try to avoid dairy for personal reasons will appreciate this recipe. You don’t need to be staying away from dairy to enjoy it, however, and anybody that loves coconut oil is going to appreciate what these delicious brownies bring to the table.

Ingredients:
1 cup all purpose flour
1 tbsp instant espresso powder, optional
½ cup unsweetened cocoa powder (2 ounces)
½ tsp sea salt
¾ cup semisweet chocolate chips (4.5 ounces)
¾ cup virgin coconut oil
1 cup granulated sugar
3 large eggs

Directions:
1. Preheat oven to 350F. Line an 8×8 pan with parchment paper.

2. In a medium bowl, whisk to combine the flour, espresso powder, cocoa powder, and salt.

3. In a microwave safe bowl, combine the chocolate chips and coconut oil. Microwave in 30 second intervals, stirring each time, until the chocolate is fully melted. It should take about 3 intervals.

4. Add the sugar and eggs to the chocolate bowl, and whisk to combine. Add the dry ingredients and stir until no flour streaks remain. The batter will be very thick.

5. Spread the brownie batter into the prepared pan and bake for 25 minutes, until the top is no longer liquidy, and a little bit squishy when pressed with your fingertip. Let the brownies cool completely, and they will slice best after a few hours. Serve and enjoy!
