This One Pot Cheesy Kielbasa Recipe With Broccoli And Rice Is About To Become A Family Favorite

Sure, you could get the family together and go out for a meal, but that is not only time consuming, it is expensive as well. Fortunately, you don’t have to worry about it, because you have this one pot meal available.

It is Cheesy Kielbasa with Broccoli and Rice, and not only does it go together easily, it cleans up easily as well. Ingredients:

1/2 tablespoon olive oil
1 Kielbasa sliced diagonally
1 small onion, diced
1 smell bell pepper, diced
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves garclic, minced
1 cup white rice
2 cups chicken stock or broth
2 cups broccoli florets, bite sized pieces
2 cups shredded cheese, divided

Directions:

Heat olive oil in a skillet on medium-high heat. Add in the kielbasa and cook for about 3-4 minutes on each side.

Remove the kielbasa from the skillet with a slotted spoon so the liquid remains behind. Add in the onion and bell pepper, sauteing until the onion is translucent.

Add the rice and stir for about 1-2 minutes.

Pour in the chicken broth and bring it to a boil. Reduce the temperature to low and cover it. Cook for 15 minutes.

After 15 minutes, add in the broccoli but don’t stir it in. Let it cook for 5-7 minutes.

Stir in the kielbasa and 1 cup of shredded cheese.

Add the rest of the cheese on top, covering for another 2-3 minutes so the cheese melts.
