Many of us are trying to watch our figure but that doesn’t necessarily mean that we want to skip on the delicious things in life. In fact, we may enjoy some of the things that we love the most on a weekly basis and that is the case in many households when it comes to pizza night. If you are trying to watch your carbohydrates but just can’t get away from pizza, this recipe is going to be for you.
Pizza is one of those foods that most people enjoy but they don’t necessarily love the crust. If you are ready to taste pizza again in a low-carb way, this cauliflower crust pepperoni pizza is the perfect recipe. It’s a great way to enjoy a low-carb meal and to have taste of pizza that many of us who are low carb eaters miss most.
Ingredients:
2 1/2 cups grated of ground cauliflower (use a cheese grater or food processor)
1/2 tsp dried basil
1/2 tsp oregano
1/2 tsp garlic powder
1/4 cup shredded Parmesan cheese
1/4 cup mozzarella cheese
kosher salt
1 egg, slightly beaten
Directions:
Preheat oven to 425 degrees.
Put all your cauliflower in a microwave safe bowl and cover it with plastic wrap. Puncture a few holes as vents, then place in the microwave for 4 minutes.
Take the cauliflower and scoop it into a mesh strainer, pressing all of the liquid out of it.
In a bowl, mix together the cauliflower, basil, oregano, garlic, Parmesan, and mozzarella, adding salt and pepper to taste.
Then add the egg to the mixture and stir it up.
Spread the mixture onto a piece of parchment paper, pressing it into a circle that is about 1/4 inch thick.
Bake it for 15-20 minutes or until the crust is golden brown.
Then all that’s left is toppings! Add sauce, cheese, pepperoni, or any other toppings you choose, baking for another 10-15 minutes until the cheese is melted.
Slice and serve your pizza, and enjoy the low carb option for your next pizza night!
