Mashed potatoes are a type of comfort food that most of us truly appreciate. They are often a part of the menu for special occasions but they can also be an excellent part of a typical meal during the week as well. If you are somebody that loves mashed potatoes, you probably recognize the fact that they last a long time and are often part of leftovers as well.
Rather than simply reheating the mashed potatoes and serving them as is, you can turn them into something that is absolutely phenomenal. These cheesy mashed potato muffins will be a regular part of your meal plan and once you try them, you may just end up making extra potatoes so that you can make them regularly. They are like comfort food gone wild.
Ingredients:
3 cups leftover mashed potatoes
1 large egg
1 cup shredded cheddar cheese, divided
3 tablespoons chopped fresh chives, divided
Directions:
Preheat oven to 375 degrees and prepare a non-stick cooking pan with cooking spray.
In a large bowl, combine your mashed potatoes with the egg, adding in 3/4 cup cheddar cheese and 2 tablespoons of the chopped chives. Add salt and pepper to taste.
Use an ice cream scoop add put your potatoes into the muffin tin, packing them down into the cups.
Top the muffins with the the remaining cheese, and bake for 30 to 35 minutes or until golden brown.
Remove muffins from the tin, let cool for a few minutes and then sprinkle the rest of your chives on top.
