Many of us lead very busy lives and it can be difficult to keep up with it all on a day by day basis. Although we might try to squeeze everything in, there is something that seems to suffer for most families. We might enjoy having a nice dinner but when the end of the day rolls around, we might just not have the energy to put one together. That is about to change.
This recipe for pasta with bacon and peas is a fantastic treat that will keep your family happy for the evening. It is made in one pot and goes together in no time at all. Make this budget meal for your family tonight and they will be asking for leftovers tomorrow.
Ingredients:
8 oz bacon, diced
3/4 cup diced onion
2 cloves garlic, minced
2 1/2 cups chicken broth
1/2 cup milk
8 oz dry penne pasta
1 cup frozen peas
1/2 cup sour cream
Salt and pepper to taste
Grated Parmesan, optional (for serving)
Directions:
In a large skillet, fry the bacon until it is cooked.
Remove the bacon and drain almost all the grease, leaving 2 tbsp in the skillet. Add in the onions and garlic and cook until softened.
Pour in the chicken broth with the milk and stir. cover and bring it to a boil.
Once it has boiled, add the pasta and reduce the heat. Cover again and let the pasta cook.
Now that the pasta is cooked, add the peas, sour cream, cooked bacon and salt and pepper to taste, and mix it all together.
Serve with grated Parmesan on top and enjoy!
