Many of us who live a busy life truly come to appreciate our slow cooker. After all, we can throw all of the ingredients together in the morning within a few minutes and by the time we get home at night, we have a fantastic meal waiting for us. For many of us, slow cookers provide the opportunity to have a delicious meal on busy days and we even use them on days when we aren’t so busy.
Although the slow cooker can be used for making a wide variety of foods, there is nothing quite like enjoying a bowl of soup that you made on your own. If you are a soup lover that enjoys making meals at home, you are going to love this split pea soup recipe. It makes up in your crockpot easily and it is super delicious.
Ingredients:
16 ounces dried green split peas, rinsed and drained
2 cups diced ham
2 cups diced potatoes
2 cups shredded carrots
2 tablespoons minced garlic
8 cups chicken (or vegetable) broth
1 bay leaf
1/2 cup fresh parsley, minced, plus extra for garnish
Salt and freshly ground black pepper, to taste
Directions:
Place dried split peas, ham, potatoes, carrots, and garlic in the bottom of the slow cooker. Pour in chicken broth.
Stir in bay leaf and parsley.
Cook on low for 8 to 10 hours (or on high for 4 to 5 hours). Taste and add salt and pepper as needed.
