When it comes to making dinner, we likely have a few prerequisites that we keep in mind. For some of us, dinner is an experience that we want to enjoy with our family, so we make sure it is delicious. Since most of us tend to live busy lives, we also want to ensure that it doesn’t take up a lot of our time as well. That is why many of us turn to one pot meals, and this one is perfect.
The combination of flavors in this recipe make it a treat that we will want to have on our dinner table. The fact that we mix the meal up in a single pot makes it a treat for those of us who have a limited amount of time to fix it. Try this one pot cheesy kielbasa, rice and broccoli tonight. It’s delicious.
Ingredients:
1/2 tablespoon olive oil
1 Kielbasa sliced diagonally
1 small onion, diced
1 smell bell pepper, diced
1/2 teaspoon salt
1/2 teaspoon pepper
2 cloves garclic, minced
1 cup white rice
2 cups chicken stock or broth
2 cups broccoli florets, bite sized pieces
2 cups shredded cheese, divided
Directions:
Heat olive oil in a skillet on medium-high heat. Add in the kielbasa and cook for about 3-4 minutes on each side.
Remove the kielbasa from the skillet with a slotted spoon so the liquid remains behind. Add in the onion and bell pepper, sauteing until the onion is translucent.
Add the rice and stir for about 1-2 minutes.
Pour in the chicken broth and bring it to a boil. Reduce the temperature to low and cover it. Cook for 15 minutes.
After 15 minutes, add in the broccoli but don’t stir it in. Let it cook for 5-7 minutes.
Stir in the kielbasa and 1 cup of shredded cheese.
Add the rest of the cheese on top, covering for another 2-3 minutes so the cheese melts.
Scoop and serve and enjoy the hearty and cheesy flavors!
