When was the last time you enjoyed a popsicle? Some of us may pick them up at the store on a regular basis but typically, they are rather lackluster and they may fill the void but they don’t necessarily go over the top with the options. If you’re somebody that really appreciates a popsicle, then this chocolate dipped coffee popsicle recipe is going to be perfect for you. In fact, you may never go back to store-bought popsicles again.
The fact that this is a coffee Popsicle is one of the first things that you will notice and certainly, most of us can appreciate just how delicious it would be. It would be enough to enjoy a coffee Popsicle straight out of the freezer but thanks to the extra chocolate dipping, it takes a fun snack and makes it into something fantastic. Enjoy these after dinner or perhaps as a midnight snack. There really aren’t any rules as to how you should eat them, it’s just a known fact that you will eat them.
Ingredients:
2 1/2 cups coffee, room temperature or cold
1 cup coffee creamer
For the chocolate shell:
1 cup dark chocolate chips
2 tablespoons coconut oil
Directions:
Combine coffee with coffee creamer in a measuring cup.
Pour into popsicle molds, add in sticks and freeze for 4 hours or overnight.
Once frozen, remove popsicles from molds by loosening quickly by running the mold only under warm water.
To make the chocolate shell, place chocolate chips and coconut oil in a bowl. Microwave on 30-second intervals, stirring in between, until melted.
Dip popsicles halfway in melted chocolate, then allow to set in freezer.
