1 tbsp olive oil
1 onion, chopped
2 tbsp butter
2 whole heads of garlic, peeled (about 20-24 cloves)
6 cups chicken or vegetable broth
2 sprigs fresh thyme
2 bay leaves
Salt and pepper, to taste
4 egg yolks
1/2 cup grated Parmesan cheese
Crusty bread, for serving
Fresh parsley, chopped (optional for garnish)
Instructions:
Step 1: Sauté the Onion and Garlic
Heat the Pot: In a large pot, heat the olive oil and butter over medium heat.
Cook the Onion: Add the chopped onion and sauté for about 5 minutes, stirring frequently, until the onions become soft and translucent.
Add the Garlic: Add the peeled garlic cloves to the pot and cook for an additional 2-3 minutes, stirring constantly to prevent the garlic from burning. This will release the garlic’s natural sweetness and aroma.
Step 2: Add the Broth and Herbs
Pour in the Broth: Carefully pour the chicken or vegetable broth into the pot, ensuring that all the onions and garlic are fully covered.
