There is a problem that many of us experience when it comes to eating dinner. We tend to get in a rut, and we cycle through the same recipes over and over again. Admittedly, we may do it because we like them but every once in a while, it’s good to mix things up and throw in something fantastically delicious. These Ginger tzatzkiki chicken wraps are the ultimate treat.
You can add these to any meal as an appetizer and it will get things started on the right foot. Just let your family know that they are on the table and before you know it, a stampede will be heading in your direction. As a matter of fact, your family may just love these chicken wraps so much that it would be worth making an entire meal out of them. Remember, there are no rules.
Ingredients:
For the chicken
4 chicken breasts
1/2 cup soy sauce
2 teaspoons ginger powder
1 tablespoon olive oil
1/4 teaspoon pepper
For the tzatziki
1/4 cup finely diced cucumbers
1 clove minced garlic
1 teaspoon dried dill
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup plain Greek yogurt
For the wraps
Whole romaine lettuce leaves, about 8-10
sliced cucumbers, about 30
Directions:
In a bowl mix together the soy sauce, ginger, olive oil and pepper.
Add in the chicken and cover with plastic to marinate for 30 minutes.
In a small bowl, add your cucumbers, dill, garlic, salt, pepper and yogurt and mix it together.
Grill your chicken.
When it’s done, assemble your wraps by lining the romaine leaves with cucumber, then add a few pieces of chicken and top with the tzatziki.
