Bring Your Family To The Breakfast Table With These Mini Baked German Pancakes

What is the first thing that comes to your mind when you think about pancakes? More than likely, you think about a stack of flapjacks that are put on a plate in front of you and smothered in maple syrup. Although that is one definition of pancakes, it certainly is not the only option. In fact, these German pancakes are a rare breakfast treat that you will want to try.

These baked German pancakes are a healthy choice and may contain many different breakfast flavors that are sure to keep you coming back for more. Not only that, they come in miniature form so you can enjoy them without getting overfull in the process.

Ingredients:

3 tablespoons unsalted butter, melted
3 eggs
1 ½ cups all-purpose flour
1 ½ cups milk
1 teaspoon salt
½ teaspoon cracked black pepper

For the toppings

Pulled pork and old cheddar cheese
Caramelized onion and apple
Cherry tomatoes, basil and bocconcini

Directions:

Preheat oven to 425 degrees, and brush a muffin pan with melted butter.

Whisk together eggs, and add in flour and milk, mixing to incorporate. Season with salt and pepper.

Pour about 2 tablespoons of the batter into each prepared muffin pan opening, sprinkle with desired topping(s) and bake for 15–20 minutes until golden brown and puffy.
