Most of us struggle to eat a good breakfast every day of the week when we have to go to work but when it comes time for the weekend, we may enjoy slowing down and eating something delicious. For many of us, the weekend not only means good food but it also means sleeping in. Fortunately, you can enjoy the combination of both with this delicious potato and cheese brunch roll.
Brunch is one of those meals that most of us truly appreciate. There is typically so much good food available, it can be difficult to choose which you are going to eat. Try making this brunch roll for your family this weekend or invite some friends over for a great brunch get together. It is something that makes the weekend great.
Ingredients
3 Lrg russet potatoes, grated
1 Lrg onion, minced
3 eggs
1 tsp each rosemary, thyme, oregeno
12 slices bacon
2 cups cheddar, grated
1 cup mozzerella
Directions
Preheat oven to 400F.
Place grated potatoes into a large bowl.
Add onions, eggs, dried herbs and a pinch of salt and pepper. Mix until combined.
Evenly spread onto parchment lined baking sheet.
Bake for 20 minutes.
Take out of oven and spread bacon and cheese onto top evenly.
Roll lengthwise and place seam down onto parchment lined baking sheet.
Bake again for 20 minutes. Slice and enjoy!
