There are many people out there who are trying to lose weight and for some of us, it is an ongoing project. We struggle with finding a balance between eating healthy and eating things that are delicious. Admittedly, there are a lot of healthy things that are delicious but typically, cookies are not on the menu. Fortunately for you, that is about to change.
These coconut cookies are not only fantastically delicious, they can boost your metabolism in the morning. It is a fantastic way to get your day started and you won’t even notice that you are eating “diet food.” After all, they are quite delicious and the natural flavors and sweetness is going to keep your palette very happy. On top of that, they have plenty of protein so they are not only a delicious treat, it will hold you over until lunch.
Ingredients:
1.5 cups shredded coconut flakes
1/2 cup sunflower seeds
1/2 cup high-quality protein powder
1/4 cup honey
1 teaspoon vanilla
1 teaspoon cinnamon
2 tablespoons coconut oil
1/8 cup water
Directions:
Preheat oven to 300 degrees.
Add you coconut flakes into a large bowl.
Add in your sunflower seeds, protein powder, vanilla, cinnamon, honey coconut oil and water.
Mix together all the ingredients with a wooden spoon.
Take small handfuls and mold them into little balls and flatten them out on a baking sheet lined in parchment.
Bake for 15 minutes and enjoy! They make the perfect quick addition to your breakfast or even as a pick-me-up throughout the day!
