These Molten Middle Truffle Cookies Are The Bomb

When it comes to enjoying a delicious cookie, it seems as if there are not any real rules out there that act as a guideline for us. For some people, it is a matter of wanting something to crunch on but for others, the softness of a delicious chocolate chip cookie may be the way that they tend to go. This recipe, however, seems to combine everything that is good about a cookie and adds a surprise in the middle.

The name of the recipe really says it all; molten middle truffle cookies. They are a lot of cookie, a little bit of a truffle and in the middle, you will have an explosion of chocolate flavor in the way of a molten treat. These cookies are fantastic when they first come out of the oven but there certainly isn’t anything wrong with enjoying them after they have cooled as well.

Ingredients:

3 pkg (4 oz. each) Semi-sweet chocolate bakers chocolate, broken into pieces
1/4 cup butter
1 can (14 oz.) sweetened condensed milk
1 tsp vanilla
2 cups flour
1/2 cup finely chopped walnuts
24 caramels, cut in half
1/4 cup sugar

Directions:

Preheat oven to 350 degrees.

Melt semi-sweet chocolate and butter in a microwavable bowl for about 2 minutes, or until all the chocolate is melted. Stir it until it is completely melted.

Mix in the milk and vanilla.

Add flour and walnuts, mixing well. Your dough will end up a little bit stiff.

Use an ice cream scoop to grab some dough and wrap it around one caramel. Roll the dough in sugar and place on an ungreased baking sheet.

Bake your cookies for 6 to 8 minutes, or until they become soft and shiny. Wait for 5 minutes before moving them so they can firm up, then let them cool completely on a wire rack.
