Chocolate cupcakes are always a treat. As a matter of fact, any type of cupcake is a treat but when it comes to chocolate, it is difficult to beat. That isn’t to say, however, that you can’t do something to a chocolate cupcake that makes it over-the-top and that is what this marshmallow surprise has to offer.
These chocolate cupcakes with a marshmallow treat in the middle are easy to bake so you will want to whip up a batch or two or perhaps even three for your friends and family. The only thing that you want to do, however, is to make sure that you make extra. After all, these are going to be such a hit that you may have a difficulty keeping some back for yourself. Hide them before your friends arrive LOL.
Ingredients:
1 box chocolate cake mix plus ingredients listed on the box
1 tablespoon vanilla
24 regular marshmallows, divided
Chocolate frosting
Directions:
Prepare the cake mix according to directions on the box. Add vanilla to batter and mix.
Fill cupcake liners halfway with batter, then add a marshmallow to the center. Bake cupcakes according to directions on the box.
Once cupcakes are done in the oven, add another marshmallow to the center of each, then pop them back into the oven for about 2 minutes, or until marshmallows have melted and filled the middle.
Gently remove cupcakes from the pan, then place on a cooling rack to cool.
Once cupcakes have cooled, frost them with chocolate frosting, and serve!
