Super Crunchy Fried Chicken

The Aussie man in the video recipe below shows his technique for getting the perfect crisp on fried chicken.

Ingredients:

1kg chicken (about 2 lbs), cut into 8 portions if purchased whole
1 Cup flour
1/2 Cup instant mashed potato powder
1 Tbs salt (table salt)
1 Tbs mixed dried herbs
½ Tsp ground black pepper
¼ Tsp cayenne pepper
½ Tbs garlic powder
1 Tbs onion powder
2 Eggs
¼ Cup water
Canola oil for frying.

One of the secrets in getting a good crisp is the oil. New oil won’t fry as well, and neither will old oil. Adding a little bit of oil previously used to fry into a batch of new oil will help you get good penetration. Remember to keep a spoonful to add to the next oil batch!
