These Caprese Calzones Are Like Pizza Pockets All Grown Up

Think back to the time when you were a child and all it took to make you happy was a warm pizza pocket straight out of the microwave. Those were simpler times for many of us and, quite honestly, we may still enjoy having a warm pizza pocket from time to time. If you miss those days, this recipe will bring it all back for you.

They are known as caprese calzones, and they bring the best of pizza pockets and a caprese salad into one, handy meal. You can enjoy these as a great meal or make them for the kids as a healthier way to snack after school. They are easy to make, so you can throw them together if you are short on time but that doesn’t mean you are short on flavor. These little “adult pizza pockets” are going to make your day.

Ingredients:

1 can Pillsbury refrigerated pizza dough
2 Roma tomatoes, halved and sliced
4 ounces mozzarella cheese, cubed
1/2 cup fresh basil, chopped
Your favorite pizza/spaghetti sauce for dipping

Directions:

1. Preheat oven to 425 degrees.

2. Roll out pizza dough onto a nonstick or lightly floured surface and cut it into 4 equal squares. Layer each square with tomatoes, mozzarella and basil. Fold in the 2 long sides of each square, pinching at the seams and the edges to seal the calzones. Place the calzones seam-side down onto a cookie sheet and bake 9-11 minutes or until golden brown.

3. Serve hot with dipping sauce.
