When it comes to lunch, we tend to go for something that is quick and easy. For some people, it might be ordering their food by the number at a drive up window. There are also those who love to bring food from home but it is typically very basic. When you see how easy it is to make this BLT guacamole recipe, you will re-think the way you do lunch.
There is just something about eating a nutritious meal that really keeps us satisfied through the day. Not only does it provide us with what our body needs, it also makes us feel good about what we are going for ourselves each and every day. Ingredients:
2 teaspoons olive oil
3 slices bacon, thinly chopped
2 avocados, seeds removed
2 romaine lettuce leaves, halved, shredded
1 small red onion, finely chopped
2 tomatoes, finely chopped
1/4 cup lime juice
2 tablespoons fresh cilantro, chopped
8 slices baguette, toasted
Directions:
Heat oil in a medium frying pan over high heat. Cook bacon, stirring occasionally, for 4 minutes or until golden and crisp. Drain on paper towel.
Roughly mash avocado in a medium bowl.
Reserve one-quarter of the lettuce, onion, tomato and bacon.
Stir lime juice, coriander and remaining lettuce, onion, tomato and bacon into the avocado season.
Top guacamole with reserved lettuce, onion, tomato and bacon. Serve with bread.
