Although that certainly is a popular definition of salsa, there is also something to be said for sweet salsa as it can add something different to the table. That is where this recipe comes in.
One of the flavors that many of us truly appreciate because it is sweet, delicious and often somewhat nostalgic, is watermelon. This recipe takes the classic salsa dish and makes it into something that is absolutely epic. It is watermelon salsa and once you put it on the table, you will find that it makes its way as a side dish over and over again. Serve this one to your guests and they will talk about dinner to all of their friends for quite some time.
Ingredients:
4 cups seedless watermelon, diced
1 cup red onion, diced
1 whole jalapeno, seeded and diced
¼ cup fresh mint, chopped
1 lime, juiced
Salt, to taste
Directions:
Mix all ingredients together in a serving bowl.
Serve immediately with chips or as a side. If refrigerating first, give a quick mix before serving.
