When I get into the kitchen I always like to try new and different things. After all, a change is as good as a rest and the other huge benefit is my family love to try new things, different tastes and ideas.
And whilst I love to bake sometimes it is truly wonderful when I find a recipe that does not require to cooker to be turned on. Well here with this recipe we have ticked all the boxes. Imported from Australia where it’s huge, let me introduce the coffee slice. This one is an ever so naughty creamy version, but everyone is allowed a naughty little treat every now and again.
What You’ll Need:
250 grams of graham crackers (about ½ box of graham crackers or 17 sheets)
1 cup desiccated coconut
1 14 oz. can sweetened condensed milk
4 Tablespoons melted butter
1 cup plus 2 Tablespoons unsalted butter at room temperature
3 cups powdered sugar
¼ cup hot milk
2 Tablespoons instant coffee powder
What You’ll Do:
Let’s get something out of the way: the guy in the video calls himself the One Pot Chef, but you will use a large bowl, a baking pan and a measuring cup. No pots. What’s up with that, Chef?
Combine the condensed milk and melted butter and stir until they are mixed.
Crush the graham crackers to crumbs in a food processor. Put the crumbs in a large bowl with the coconut. Pour in the condensed milk mixture and mix until they’re blended. Pour this into a pan that you’ve prepared with butter and parchment paper. Press this crust in until it’s even all over. You can taste a little smidge if you like. Chill this base in the refrigerator.
Now let’s make the topping. Heat the milk and stir in the instant coffee. In a large bowl, put in the room temperature butter and sift the powdered sugar over it. Whip this with a mixer, add the cooled coffee mixture and mix that in.
Let’s get it together! Spread the topping over the base. Does that chef’s spatula say OMG CAKE? Why, yes it does! Put the whole thing in the fridge for 20 minutes, take it out and cut into slices.
