That isn’t only true when it comes to the nutrition of the snack, it is also true of the flavor. Both of those factors come together perfectly in this Parmesan roasted cauliflower recipe.
If you are someone who tends to avoid cauliflower because it is just “one of those types of vegetables,” you are about to have your mind changed. When you roast cauliflower and season it like is shown in this recipe, it turns into something that is unbelievably delicious. All you do is cut the cauliflower into bite sized pieces, spice it and pop it in the oven. What could be easier for a healthy snack that is bursting with flavor?
Ingredients:
8 ounces cauliflower florets, sliced horizontally
2 tablespoons melted butter
1 tablespoon olive oil
Pinch of salt
3 light dashes of ground black pepper
1/2 cup Parmesan cheese
1 teaspoon chopped parsley leaves
Directions:
Preheat oven to 400 degrees.
Toss the sliced cauliflower with the butter and olive oil. Season with salt and black pepper.
Transfer the cauliflower to a baking sheet, in single layer, roast until almost tender about 20-30 minutes.
Remove from the oven and sprinkle the grated Parmesan and chopped parsley leaves on top of the cauliflower, roast again until the cheese melts and slightly crusty, about 5 minutes.
Remove from oven and serve immediately.
