Make These Easy Ham And Cheese Breakfast Quesadillas And Love Breakfast Again

If there is one thing we hear about breakfast over and over again, it is the fact that it is the most important meal of the day. Most people would not argue that fact but, regardless of how popular the saying is, the majority of us do not take the time to eat a good meal in the morning. Perhaps it is because we feel it is because we are too busy to make it but it doesn’t matter why, we likely skip it more often than we should.

If you would like to start eating breakfast again, this recipe is going to get you started. Not only are these ham and cheese breakfast quesadillas easy to make, they are quite good as well. Your family is going to love them.

Ingredients:

8 flour tortillas
2 tablespoons oil
3 cups Cheddar cheese, shredded
Cubed ham
1 cup green onions, thinly sliced
1 cup sour cream
1 cup salsa
Sliced jalapeno, optional
2 scrambled eggs per quesadilla

Directions:

Place a griddle or large frying pan over medium heat.

Spray one side of a flour tortilla lightly with cooking spray and place it oil-side-down on the griddle.

Spread even amounts of cheese, scrambled eggs, ham and green onions on the tortilla.

Cover with the other tortilla and spray the top with cooking spray.

When the bottom is golden brown (about 5 minutes), carefully flip the quesadilla and fry until the other side is golden brown (about 4 minutes).

Slice into wedges and serve.
