Try This Refreshing Chicken Pasta Salad For A Quick Lunch Or Even A Sitdown Dinner

Many of us enjoy eating a nice meal but we don’t necessarily want to take a lot of time to make it. That is why we may shoot for something that is delicious, refreshing and can be thrown together in no time flat. If you are trying to fill that recipe, this chicken pasta salad is the perfect way to do it.

Be honest with yourself, when was the last time that you really enjoyed a great lunch at work? Perhaps you ate out recently or somebody else brought something that you thought was delicious but when it comes to making your own lunch, it may be a PB&J to go. Once you know this chicken pasta salad recipe, however, you will have that delightfully refreshing and delicious lunch that you been desiring all along.

Ingredients:

Marinade/Dressing

1/4 cup fresh lemon juice
1/4 cup olive oil
2 cloves garlic, minced
1/2 tbsp dried oregano
1/2 tsp salt
Fresh pepper (to taste)
Pinch lemon zest

Salad

2 boneless, skinless chicken thighs
8 oz pasta (any shape), cooked
1 bell pepper
4 oz grape tomatoes, halved
1/2 cucumber (1.5 cups diced)
1/4 cup parsley
2 oz feta

Directions:

Add the lemon juice to a bowl with the olive oil, the garlic, oregano, salt, pepper and a pinch of lemon zest. Whisk it all together until combined.

Pour the dressing into a Ziplock bag with the chicken thighs and let marinade for 30 minutes.

Cook your chicken in a skillet until it is ready. Remove it from the heat and let it cool.

Once it is cooled, cut it into bite-sized chunks.

Add the chicken into a large bowl with your cooked pasta. Add in the diced peppers, cucumber, parsley, feta, the left over marinade and another pinch of lemon zest.

Toss all the salad together until everything is combined and then serve!
