Have a Blast With These Funfetti Whoopie Pies

What are some of the fun snacks that you used to eat when you were a child? I can remember going to the store and picking up something off of the shelf, and it was typically one of the larger, cake-like, sweet treats that I could find. Of course, a whoopi pie was always on the list of choices and in many cases, it one.

Now it is possible to enjoy whoopie pies because you are able to make them at home and to make them a special treat with plenty of color. All you need to do is follow this recipe, which includes plenty of funfetti, some creamy, colorful filling and everything that is necessary to make them go together perfectly.

Ingredients:

1 white cake mix
1/2 cup butter, softened
1 egg
1/2 container of sprinkles
White Frosting, either store bought or homade
Food coloring

Directions:

Preheat oven to 350 degrees.

Add your cake mix to a bowl with the butter and egg and mix until smooth.

Fold in your sprinkles. Use as many or as few as you would like.

Use an ice cream scoop to portion out the dough balls and roll them before pressing them onto a baking sheet lined in parchment paper.

Bake for 8-10 minutes and let them cool completely.

While they cool, separate your frosting into different bowls. Use one bowl for each color you plan on using.

Add food coloring and mix each bowl of icing.

Put in an icing bag or use a ziplock with the corner cut off and put icing on the flat side of one of your little cake bites.

Top with another little circle and press together.

Repeat until you have a wide variety of colors to chose between and enjoy your rainbow cupcakes!
