These Bacon Wrapped Meatloaf Cupcakes Make A Perfect Treat

Although there are many different things we can eat for dinner, sometimes it’s good to go back to an old classic. One of the classics that many of us appreciate is meatloaf, and each of us probably have our own recipe. One thing that they all have in common, however, is that they are simple to make, so it is a great dinner option.

If you would like to put a spin on your meatloaf, you can try these Bacon wrapped meatloaf cupcakes. They make a bite sized treat for your family that is topped with mashed potatoes. It is the combination of food that really makes a great meal and you will appreciate what they bring to the table.

Ingredients:

1 1/2 lbs ground beef
1 cup bread crumbs
1 onion, finely diced
1 egg, lightly beaten
1 1/2 tsp salt
1/2 tsp pepper
1 (8 oz) can tomato paste
2 tbsp Dijon mustard
1 1/2 tbsp Worcestershire sauce
12 slices of bacon
4-6 potatoes
1/4 shredded cheddar cheese
2 tbsp butter
1/4 cup milk
1/2 tsp salt

Directions:

Preheat your oven to 350 degrees.

Wrap each slice of bacon around the edge of the cups and set aside.

In a large bowl, mix together your ground beef with the bread crumbs, onion, brown sugar, egg, Dijon mustard, tomato paste, Worcestershier sauce and salt.

Separate your meat and roll it into 12 evenly sized balls and place them each in the cupcake tin, with the bacon surrounding them.

Bake for 1 hour.

While it cooks, boil 4-6 potatoes until soft. Drain and add the butter, cheddar cheese, milk, and salt and mash until they are smooth.

Scoop all the mashed potatoes into a pastry bag or use a large Ziplock with the corner cut off, and pipe the mashed potatoes on top of the cooked meat loaf cupcakes once they are out of the oven. Bake the cupcakes with the mashed potatoes on them for another 5 minutes, increasing the temperature to 400 degrees.
