This Bacon And Brie Grilled Cheese Is A Culinary Masterpiece

There are certain meals that we likely remember from our childhood and we try to recapture them again and again. Often, they are considered a comfort food, not only because they are delicious, but because they are filling as well. For many of us, one of those foods is the grilled cheese sandwich. Yes, it may be a simple meal but it has so much to offer.

If you are someone that loves a grilled cheese sandwich, you are going to flip over what this recipe has to offer. It takes the common grilled cheese and takes it to the next level (and beyond). It is the grilled brie and bacon sandwich, complete with caramelized onions. I don’t know about you, but I don’t think there could be a more perfect combinations. If this isn’t comfort food, I don’t know what is.

Ingredients:

for the caramelized onions

3 large onions, sliced
2 tablespoons olive oil
½ teaspoon salt
4 tablespoons brown sugar
2 tablespoons red wine vinegar

for the sandwich

3-4 slices of bacon, cooked until crisp
4 -5 slices of brie cheese
2 slices of bread (we used rye)

Directions:

To make the caramelized onions, heat a large frying pan over medium heat then sauté the onions in the olive oil with the salt until soft and golden.

Add the sugar and vinegar and allow to caramelize. Set aside.

To make the sandwich, butter the bread on both sides then top with the onions, brie cheese and bacon.

Grill in a hot pan/sandwich press until golden brown and heated through.

Serve immediately (drizzle with balsamic reduction if desired).
