You Are Going To Love This French Onion Chicken & Rice Casserole

Like many people, you probably have a very busy day on most days and it can be difficult to come home and fix a meal after you have been working tirelessly. Of course, that doesn’t mean that we don’t want some comfort food every once in a while and to be honest, there are some times when we need it! That is where this delicious meal comes in.

Casseroles are notoriously easy to make but they are not always the most delicious foods in the world. That is about to change, however, thanks to this classic chicken and rice meal that is in the form of a casserole. It is the ultimate in comfort food and when you take your first bite, you will know that you are finally home.

Ingredients:

2 cups instant white rice
2 cups water
2 cups chicken, cooked and chopped
8 ounces French onion dip
1 can cream of chicken soup
1/2 cup chicken broth
1 cup cheddar cheese, shredded
1 cup French’s fried onions

Directions:

Preheat oven to 350 degrees. Prepare a 9×13-inch pan with nonstick spray. Set aside.

In a medium saucepan, bring water to a boil. Add instant rice, cover and turn off heat. Allow to stand for 5 minutes, until all water is absorbed.

In a large bowl, combine chicken, chicken soup, French onion dip, cheddar cheese, chicken broth and cooked rice. Spread into prepared pan. Top with French’s fried onions.

Bake for 20-25 minutes, until cheese is melted and bubbly.
