Head South Of The Border Tonight With These Yummy Chicken Taco Taquitos

There are certain foods that just seem to be universal in their appeal. When we serve those foods to our friends or family, we are almost guaranteed to get a pat on the back or perhaps even a high five. One of those foods are tacos, and they are not only a favorite because they are delicious, they are quite easy to make as well.

When it comes to taco recipes, everyone seems to have their own, unique style. Some even prefer putting a spin on it, and that is where this taquitos recipe came in. They are absolutely yummy and are perfect for serving as dinner for your family or as an appetizer for when you have friends over. They are even great for an after school snack for the kids. Just make extra and freeze them. You can reheat them and serve when the mood strikes.

Ingredients:

2 boneless skinless chicken breast halves, cut into small pieces
2 tablespoons taco seasoning
2 tablespoons olive oil
½ cup frozen corn kernels
½ cup refried beans
½ cup salsa, store bought
1 cup cheddar cheese
2 tablespoons cilantro, chopped
12 6 inch flour tortillas
¼ cup butter, melted

Directions:

Preheat oven to 450 F degrees.

Heat the olive oil in a skillet. Season the chicken breasts with the taco seasoning. Add chicken to skillet and cook for about 5 minutes or until chicken is cooked through.

Add corn, refried beans, salsa and cheddar cheese to the skillet, stir and cook for 2 more minutes. Add cilantro and stir.

Grease a 9×13 baking dish with some of the melted butter. Lay a tortilla flat and top with a couple tablespoons of the chicken mixture.

Tightly roll up the tortilla and place it in the baking dish. Brush with melted butter. Repeat with remaining tortillas. You should have enough chicken for the 12 tortillas.

Bake for 15 minutes or until taquitos are crisp and golden brown. Serve with salsa on the side.
