The Triple P Breakfast – Pineapple Pancake Perfection

With pancake Tuesday nearly upon us, we bring you this tasty, simple recipe that will become a family favourite instantly.

Everyone loves pancakes, especially the kids but sometimes it can be difficult to get healthy fruit into our little ones. This twist to your standard pancake with lemon and sugar or chocolate sauce is the perfect solution.
Quick and easy to prepare, your only problem will be having sufficient ingredients available, as everyone will be asking for second helpings.

You Will Need:

Cleaned and cored fresh pineapple
4 ounces brown sugar
6 ounces butter
2 ½ cups of cake flour
2 tablespoons of baking powder
2 tablespoons baking soda
¼ teaspoon salt
2 ½ cups of milk
¼ cup of granulated sugar
¼ teaspoon vanilla extract
Maraschino cherries

What To Do:

First, caramelize the pineapples rings by melting 4 ounces of butter in a large saucepan and adding sugar. Cook the rings for several seconds on each side.

In a large bowl, whisk together the cake flour, baking powder, baking soda, and salt.

In another bowl, mix the milk, sugar, and vanilla extract together, then combine the wet mixture with the dry ingredients. After the mixtures are combined to a thick consistency, add ¼ cup of melted butter.

Pour a half cup of the pancake batter onto a griddle add a pineapple and a maraschino cherry. Flip, allow the pancake to cook, and remove from the griddle.
