Go Fresh With This Strawberry Eclair Dessert

We live in a world that is full of choices but sometimes, one of those choices stands out above the rest. When you think to the number of different types of desserts we have to choose from, for example, it can get quite overwhelming. Once you see this recipe for a strawberry eclair, however, you will recognize that there is clearly only one choice on the menu.

After you taste this delicious dessert, you might have a difficult time describing it. It’s not that you couldn’t say it was delicious or perhaps fantastic, it’s just that those words don’t quite capture the wonderful taste of this recipe. After all, considering the fact that it has layers of sliced strawberries, whipped cream, chocolate, Graham crackers and pudding, there really is nothing that you wouldn’t love about it. Make this one for your next get-together or for a family dinner and just sit back and watch the reaction.

Ingredients:

1 pkg. (4-serving size) Vanilla Instant Pudding
1 1/2 cups cold milk
3 cups thawed Cool Whip
2 1/2 cups sliced fresh strawberries
23 graham wafers
6 oz. Semi-sweet chocolate, broken into pieces
3 tablespoon butter

Directions:

Beat pudding mix and milk in large bowl with whisk for 2 min.

Stir in Cool Whip.

Layer 1/3 of the graham wafers, half the Cool Whip mixture and 1 cup berries in 13×9 pan, breaking graham wafers as necessary to fit in single layer in pan; repeat layers.

Top with remaining graham wafers.

Microwave chocolate and butter in microwaveable bowl on high 2 min. or until butter is melted, stirring after 1 min. Stir until chocolate is completely melted and mixture is well blended. Spread over graham wafers.

Refrigerate 3 hours.
