Potato Soup in the Slow Cooker Recipe

If you’re like most people, you consider soup to be a side dish and you may never have thought about having it has the main meal. That is certainly going to change, however, when you see this absolutely delicious potato soup recipe that is super simple to make in the crockpot.

Most families are busy, so being able to make an easy dinner is the ideal way to go. This recipe is certain to be perfect for your needs, because it takes almost no time to prepare. Of course, you don’t need to tell anyone that you fixed it without any major preparation, they will not be able to tell the difference!

Ingredients:
10 red potatoes, cut into cubes
3 tablespoons all-purpose flour
3/4 cup real bacon bits
1 small red onion, chopped
1 clove garlic, minced
3 cups chicken broth
1 tablespoon ranch dressing mix
2 teaspoons dried parsley
1 tsp pepper
1 cup half-and-half (or table cream)

Toppings:
1/2 cup shredded Cheddar cheese
1/4 cup chopped green onion

Directions:
1.Add potatoes and flour into the slow cooker first, then mix around to make sure all parts of the potatoes are covered.
2.Combine all remaining ingredients with the exception of the half-and-half (or table cream) into the slow cooker.
3. Cook on low for 8-9 hours, or on high for 4-5 hours.
4. Add in the half-and-half and cook for an additional 15 minutes.
5. Add desired toppings and enjoy!
Here’s a tip: Make sure the potatoes are all cut to approximately the same size. Smaller potatoes will cook faster, and dicing to the same size will prevent you from having unevenly cooked potatoes.
