Tornado Potato Skewer Are Not Only Beautiful And Convenient, They Are DELICIOUS!

There are many things that we likely enjoy having on the table but when it comes to a side dish, there are a few choices that will likely be there again and again. For my family and for many other families, there is nothing quite like a potato. I don’t care if they are baked with butter, sour cream and cheese or if they are French fried, they are absolutely delicious and the perfect complement for any meal.

Of course, potatoes can be made in almost any way imaginable but what I saw this recipe for tornado potato skewers, I knew that I had to share it with you. Not only are they absolutely delicious, they are adorable and surprisingly healthy. After all, these potatoes are baked, not fried.

If you are ready for guilt free side dish, this is the one for you. I don’t know if it is the fact that it is a thin sliced potato or if it is the melted garlic herb butter, but I absolutely love them.

INGREDIENTS
4 small-to-medium Yukon gold potatoes
¼ cup butter, melted
2 cloves garlic, minced
1 teaspoon Italian seasoning
½ teaspoon kosher salt
¼ teaspoon black pepper
Parmesan cheese, for garnish

DIRECTIONS
1. Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius). Soak 4 wooden skewers in water for 10 minutes.

2. Carefully, push a soaked wooden skewer through the center of each potato. Place a paring knife, positioned at an angle, at one end of the potato. Start cutting toward the opposite end, turning the potato as you cut thin slices around the skewer until the whole potato has been sliced like a corkscrew.

3. Gently, stretch the potato apart on the skewer. Rest the skewers over a baking dish so that the ends are resting on the edge of the dish and the potatoes are sitting just above the pan.

4. In a small bowl, combine the melted butter, garlic, Italian seasoning, salt and pepper. Mix well.

5. Brush each potato skewer with the herb and garlic butter.

6. Bake for 30 to 40 minutes, or until the potatoes are cooked through and the edges are crispy.

7. Sprinkle with Parmesan cheese and serve.
